French toast…can you make it without eggs? That’s a question that I get asked pretty regularly. And it took me awhile to investigate the answer, because I just have never loved French toast.

Is that odd? I’ve never loved the batter on the bread, or just the general egginess of it. All the more reason to come up with a recipe for egg free French toast, I suppose!

Well, I’m sorry that I took so long. I did come up with a recipe for vegan French toast without eggs, and I like it SO much better than the traditional recipe! It’s lighter, the crust is crisper, and it’s just all around more delicious.

You may wonder what to batter the bread with, if we aren’t using eggs. It’s actually really simple – just a mix of non-dairy milk, potato starch, cinnamon, and a dash of salt.

If potato starch won’t work for you, I think cornstarch or maybe even tapioca starch would work just as well. The starch is in the batter to provide that crispy crust that makes this eggless French toast so yummy!

A few tips to make this egg free French toast a success:

make sure to oil your frying pan really well – use lots of vegan buttery spread
use your spatula to move the bread around – if it sits too long in one spot, it will start to stick
take your time – it takes a bit of time to get the crispy crust – about 4-5 minutes per side
