Tiramisu french toast

This tiramisu french toast is is baked, not fried. That way the top stays crispy, golden and toasted but the bottom is a custardy, tiramisu delight.

Now there is a bit of debate in our house about this. Is it really baked french toast? Is it not bread and butter pudding? There’s no butter in it though, but there’s mascarpone- which you’d never find in french toast… It’s also breakfast, not dessert. Do you see the predicament?

Tirimisu baked french toast
Ingredients
  • 400g Brioche
  • 150g Mascarpone
  • 1 egg
  • 3 Tbsp sugar
  • 50g chocolate chips
  • freshly brewed strong coffee
  • cocoa powder to dust
Method
  1. Thickly slice the brioche and lay in an oven proof dish.
  2. Whisk together the mascarpone, egg, sugar and chocolate chips.
  3. Let the mixture down with strong coffee until it is the texture of double cream.
  4. Pour the mix over the brioche and leave to soak for 15 minutes.
  5. Preheat the oven to 190 degrees.
  6. Bake for around 25 minutes or until the bread is golden and the mixture is set.
  7. Dust liberally with cocoa powder and serve straight away with plenty of hot coffee.
